miss b loves......chocolate chip cookies


I have tried a few different cookie recipes but when I spotted this one in my new Green and Black's cookery book I just had a feeling that this was going to be a favourite and I wasn't disappointed! 



I used Green and Black's 70% organic dark chocolate but I'm sure any good quality chocolate would give an equally good result.



Ingredients

Makes 16

125g unsalted butter
100g caster sugar
50g muscovado sugar
1 medium free-range egg
Few drops vanilla extract
140g plain flour
½ teaspoon baking powder
½ teaspoon salt
75g rolled oats
200g dark(70% cocoa solids) or milk chocolate chopped into chunks(amount depends on your level of addiction)


1.Preheat the oven to 180°C / Gas mark 4


2.Cream the butter and sugars together in a bowl until smooth. Beat in the egg and vanilla. Add the flour, baking powder, salt, oats and mix in the chocolate to form a dough. Set aside in the fridge for around 10 minutes to firm up.

3.Take small balls of the dough about the size of a plum and roll them in your hands. Place on a baking sheet lined with greaseproof paper, spacing them apart to allow for them spreading as they cook. Flatten each ball slightly with your hand then place in the oven and cook for 15 minutes.

4. Remove from the oven and leave to cool on the tray for 5 minutes to harden, then use a fish slice to transfer them to a wire rack.


Tip

- You can use any flavour of chocolate, just make sure the chunks are a reasonable size.
- I'm a true chocoholic and I used the full 200g of chocolate(!) but 150g would be fine.

    Those cookies look fab. I saw a recipe the other day for chocolate chip / sea salted cookies - i do love that mix of sweet and salty together - so they are on my list of To Dos for the chilly days soon to arrive. My Huzz swears I have a secret stash of cookies somewhere in the house (which I don't as they don't stay around that long!).

  19. Just when I'm ready to start my diet (happens every Monday).....you post a recipe for my most favorite dessert in the world (well one of them). I am going to have to try it with that chocolate and find out what muscovado sugar is! Thanks for the great recipe!

    1. Hope you enjoy then! Muscovado sugar is just a type of unrefined brown sugar but I'm sure you could use alternatives.
