I mentioned briefly here that during our trip to Singapore in July we enjoyed one of the most memorable lunches we have ever eaten. Well, it was more than a lunch and more of an experience! Pollen takes its name from renowned, Michelin starred British chef Jason Atherton's flagship restaurant Pollen Street Social in London. It's the perfect name, as this one is housed in the Flower Dome at Gardens by the Bay.
Our table was in the perfect spot with impressive views of the city and the huge ferris wheel, the Singapore Flyer.
The beautiful charger plates, decorated with illustrations of flowers and plants, immediately caught my eye ....
Bread served with garlic-infused butter topped with crispy seaweed. Who would have thought that humble bread and butter could taste so special!
Creative, innovative flavour combinations and possibly some of the prettiest food we have ever eaten then followed. Presentation was so carefully thought out but as much as I'm impressed by attractive plates of food, there have to be quality ingredients and great flavours too......and of course there were!
Chicken liver parfait, Szechuan pepper, verjus, 80% Valhrona |
Each dish had the wow factor with intense and unusual flavour combinations and textures. I was curious about chocolate with chicken liver parfait but it was exquisite! The swordfish starter was another good choice too!
Lightly cured swordfish, fennel, grapefruit nitro, toasted seaweed |
On to mains .... If I spot red snapper on the menu then it's usually my first choice and this was cooked to perfection!
Poached red snapper, squid, black paella, pomelo and cucumber salad |
Herbs used are grown in Pollen's own herb garden.
200 day grain-fed Black Angus beef from Stockyard served with piccalilli |
We both chose the Black Forest for dessert served on a huge white stone. A playful and clever twist on the classic Black Forest dessert..... Desserts are known for being inventive and experimental here!
Cherry, pandan, JAAL 75% chocolate, shimeji, roasted tomatoes |
Service was impeccable too .... attentive, slick without being overbearing and the contemporary interior is stylish, elegant, unfussy creating the perfect relaxed ambiance to enjoy a leisurely lunch (or dinner!)
Finally .... the sweet petits fours ......I would love to recreate those melt in the mouth marshmallows at home!
The verdict ....truly unforgettable! One flavour sensation after another! A bonus too .... Guests dining at Pollen also have free access to the Flower Dome. A perfect post lunch activity!

DeleteWhat an extraordinary place! I'd love to experience something like this one day! All the food looks like it took them days to prepare it! And decorated so carefully! And the Garden is a great idea after a luxurious lunch! Those Supertrees look odd but I like them, haha.

ReplyDeleteI'm salivating, well you know me, I'm such a foodie and like you I believe not only should it be about taste but presentation too. I was just reading some research the other day that showed how much of an impact food presentation has on taste. I've never ordered red snapper at a restaurant but my mum used to make me some occasionally for breakfast. I love the fact that they used the herbs that were grown in their own gardens, that's definitely something to boast about and would account for , I'm sure, the exquisite flavours your mouth experienced.
ReplyDeletei LOVE GOING to Singapore

I'm a little lost for words.. these photos are fantastic! I adore your travel photos :) All of this food looks so beautifully presented and neat/clean on the plate. I'm amazed that those white blocks are marshmallows - how interesting and unusual, I can see why you're keen to recreate them at home! If you choose to ever try that recipe, I'd love to see how on your blog?! :)

Thank you, Gabrielle. I'm so pleased that you enjoy my travel photos. If I manage to successfully make anything vaguely similar I will write about it but recreating these sweet treats would certainly be a challenge!!
DeleteImpressive food presentation and of course the location can't be beaten. I'm particularly interested in the swordfish dish as I grew up eating a similar delicacy. The fish is 'cooked' in its marinade. I always make sure I have one whenever I visit. Thanks miss b for always dropping by my page and enjoying my travel posts. It's always flattering to hear such comments from someone who's so well-travelled. Hope you're having a lovely week so far :)
